Smoked Gouda Pimento and Cheese

I'm going out of town tomorrow for work and was trying to think of some simple things Henderson could have on hand since he'll be on call all week. Recently, we've become obsessed with smoked Gouda and one of my cousins said that this cheese was amazing as the cheese in pimento and cheese.

So, I turned to the old faithful, Google, and found this recipe.

You'll need:
1 cup shredded smoked Gouda
1 cup sharp white cheddar cheese
1 cup mayonnaise
1/4 cup minced red bell pepper
1 jalapeño, minced
1 small jar pimentos (I actually used the large jar, and it turned out delicious!)
Salt and pepper to taste

I got the mixer below from Mimi for Christmas, and the shredding attachment from Henderson for Christmas. Sad that this was my first time to use either one, but I had told myself I shouldn't unpack them until we are in a bigger kitchen. But since I was also needed to shred some cheese for dinner, I thought, why not? If you don't have this attachment you need it!!

After I shredded the cheese, I combined all the ingredients and let it chill for an hour. Then I used one of my new pieces of AnnieGlass (a beautiful wedding gift) to display it! Using new gifts was definitely my favorite part of making this pimento and cheese! Or maybe it was the eating it part...

Happy Birthday Dixon!

Sunday, August 5, was Dixon's third birthday! We bought him a new squirrel toy and by the time we got home from work Monday, he had completely destroyed it! But that's ok; he enjoyed himself. This little dog has meant so much to me over the last three years. I thank Henderson all the time for giving him to me. I love both of my guys so much!

Giving up Control

It's about to get real real around here, guys. Moving to a new state is hard. Moving to a new state with your amazing husband makes it exponentially easier. I'm a worrier and a control freak. Since we decided we were moving to Ennis, I've worried. Will we like it? Will we find any friends? Will it be a good move? How different will life be?

Well, in short, pretty different. No, we didn't move to another country. We only moved two states away, and, technically, we're still in the south.

The first thing I googled when we decided to move here was churches. When I was googling, we found a church that looked great on paper! I was all ready to move my membership! I had found where we should attend church as a family. Something else I could control...

Well, it's pretty obvious where this is going. We went a couple of weeks ago and didn't feel quite at home, so today we decided to go to the early service. After attending again, we're still not sure and we have plenty more churches to visit, but I definitely feel like the sermon was written for me. It was about faith and how we should expect miracles and stop letting worries get in the way of our relationship with God.

It was like a light bulb went off. God will provide. He will provide friends for us, a home for us, a wonderful life for us, if I stop worrying so much and give up the control to Him. God will not leave us here with no support system, He will not let us down. And as much as I like to be in control and plan our entire life, His plans are way more amazing than mine could ever be.
